My Sweetia Chia Seed Pudding

Hi all,

The Royal wedding might be over but there’s still something to look forward to…my chia seed pudding recipe made with a not so secret ingredient, Sweetia!

As the weathers picked up I’ve started to get bored with my standard Weetabix breakfast. I’ve been having it religiously for at least 6 months and decided it was time to explore and add a couple of easy options and this has been one of my fav’s.

It’s super easy to make, versatile, I feel like I can have it as a breakfast, dessert or evening treat and most importantly it’s scrumptious without the guilt.

What makes it guilt free? Well the not so secret ingredient, Sweetia which is a natural Stevia sweetener that has a sweet taste, with no bitterness or aftertaste. It is approximately 200 times sweeter than table sugar, so just a smidge is needed to sweeten tea, coffee, desserts etc. And not forgetting the most important part, it’s ZERO CALORIES, YAY!!

I’ve been using Sweetia for about a month now and I have tried all kinds of sweeteners and this has to be the best calorie free one I have come across. I have actually decanted it into little pocket-sized bottles and have them in my handbag and work drawer as I can’t live without it. I have no guilt when I pop in for a tea or coffee at Starbucks, as I’ll shake in a little Sweetia rather than 3 sugars (yes I used to have 3 sugars in hot drinks) and the only calories i’m consuming is that of the milk, which is not a lot.

So how do I use Sweetia to make Chia seed pudding.

Ingredients:

  • 40 g chia seeds
  • 270ml milk (of choice)
  • 2 smidgens of Sweetia 
  • fruit and nuts to decorate
  • Food colouring (to make the shot Instagram worthy)

Directions

  • Add chia seeds to milk of choice along with 2 smidgens of Sweetia.
  • Whisk well, cover and place in the fridge overnight to thicken.
  • At this point you may want to split into portions.
  • Following morning create your personalised pudding by adding fruit and seeds.
  • Grab yourself a spoon and tuck in.

The great thing is you can portion it all out so they are ready to grab from the fridge, chuck on your toppings and you’re good to go. I also like adding a couple of spoons of Total Greek yoghurt to get some extra protein in.
